Recipe post- Healthier Spring Rolls

Sorry I've been MIA guys. Usual story- cupcakes, day job, business admin etc etc

Hope everyone is ok. The weather is getting depressing now! I just want some sunshine. At least we are going into March when it should perk up a bit and keeping my fingers crossed we may even get a BBQ day in April like we did last year! Here's hoping.

I'm in the middle of setting up another blog. Mainly because I want a blog for my crafts, cupcakes eating, recipes, general life chit chat in one place. I'll keep you posted on what the new bloggy is.

At the moment i'm doing patchworks for the house- doing a cushion, a table cloth and I want to do a nice new patchwork quilt for our bed. I've got some great inspiration from my new favourite blog Cherry Menlove

Whipped up a batch of my Lemon and Poppy seed muffins tonight. I'm taking them to work (good thing about being a good baker= more friends). However I think I'm going to have one as a treat with a nice cuppa before bedtime.

Anyway here is a little Spring roll recipe for you. N.B frylite is a low cal spray oil.

Healthier Spring rolls- Serves 4

For filling use frylite to fry strips of 100g carrot, 100g cabbage, 1 small red pepper, 100g beansprouts with 100g fresh peeled prawns, 2 tbsp dark soy sauce and 1/4 tsp chinese 5 spice powder. Stir fry for 2 mins then remove from heat and allow to cool slightly.

Cut sheets of filo pastry to size, spray with cooking spray and spoon some filling onto one end. Roll up pastry tucking edges in as you go to form sausage shape. Place spring rolls on baking sheet (line with non stick baking parchment) and cook in oven preheated to Gas mark 5/190 for 10 minutes. I spray mine with frylite before cooking so they crisp up a bit.

Recipe post- Spanish chicken with Chorizo and potatoes

I promised i'd put this recipe up as it's amazing. We have this a good few times a month as it's super easy, using one pan and is cheap. This is from Nigella's "Kitchen". I use less ingredients as it's for 2 of us and i've also used lemon zest if I haven't got an orange and it still works great.

INGREDIENTS

2 x 15ml tablespoons regular olive oil

12 chicken thighs (bone in, with skin)

750g chorizo sausages, whole if baby ones, or cut into 4cm chunks if regular-sized

1kg new potatoes, halved

2 red onions, peeled and roughly chopped

2 teaspoons dried oregano grated

zest 1 orange

METHOD

Preheat the oven to 220°C/gas mark 7. Put the oil in the bottom of 2 shallow roasting tins, 1 tablespoon in each. Rub the skin of the chicken in the oil, then turn skin-side up, 6 pieces in each tin.

Divide the chorizo sausages and the new potatoes between the 2 tins. Sprinkle the onion and the oregano over, then grate the orange zest over the contents of the 2 tins.

Cook for 1 hour, but after 30 minutes, swap the top tray with the bottom tray in the oven and baste the contents with the orange-coloured juices.

Serves: 6

Happy Hump day!

Hi guys,

Sorry I didn't post yesterday. My bad.

Today I had a nice lie in as didn't have a cupcake class to do. For breakfast I had 2 slices of wholegrain toast with honey. Sorry no pic!

Lunch was Thyme-roasted Gem Squash I missed out the cream though as wanted to make it a bit healthier.


I watched cupcake wars and then chillaxed on the sofa and watched Bridget Jone's diary as I haven't seen it for ages and it fit in perfectly with my chill day!

My books came yesterday- The Kind Diet and Clean & Lean Diet. Last night I started The Kind Diet and I couldn't put it down. I got to Chapter 7 before I couldn't keep my eyes open any longer. I'm thinking about eating a more veggie/vegan diet. And this book was recommended to me. I was a vegetarian when I was a teen and then just gave it up. But I miss it. I'm not sure how I'm going to approach it yet and may not follow it as strictly- e.g I love eggs, prawns, fish and honey but a more of a flexitarian diet combining vegan/vegetarian with a day here or there with lean milk or fish. I'm just rambling! I'll let you know once I've figured out what i'm going to do. The good thing about The Kind Diet is there are different levels to follow. You can start as a "flirt" and move to a "superhero".

I also baked some cupcakes today. Vegan Vanilla Cupcakes drizzled with maple syrup- yummy!

Dinner was roasted pumpkin speltotto (spelt risotto) it was pretty good actually!


As it's freezing tonight me and Phil fancied oatmeal with walnuts, PB and choc as pudding- delish!!!

Question for today:

What goals did you set for 2010 or still want to achieve?

Mine are:

  • Lose another stone which will take me to 4 stone lost this year.
  • I want to find a job! I've been out of work since July and money is getting seriously tight! I want something close to home and for a bit less money so I don't have such a stressful job as before. Just doesn't seem to be a lot about
  • Seriously up my exercise. As you've probably read i've been a bit slack since my operation and with moving home and i've still not got back into a routine.
Right off to read some more of The Kind Diet before bed!

Love Lazy Sundays

It's been such a nice day here! Sun has been shining all day.

After a nice Sunday lie in we had some scrambled eggs on wholegrain toast and 2 slices of lean breakfast. AMAZING!

Then a quick trip to the pet shop and supermarket for supplies before going back home.

I baked my Christmas cake. I used this recipe by the queen of Baking Mary Berry. The house has been filled with wonderful Christmas smells :-0

For lunch I made some tofu and vegetable brown rice. Yummy. Did a bit too much though so had to throw some away- hate waste!!!


For dinner I made lemon chicken and served it with some brown noodles and salad.


As it was Sunday and I've been craving it all week I made a mini apple and blackberry crumble for me and Phil and served it with some light vanilla ice cream- perfect!!!!

Recipe post- Breakfast Burrito

I bought The Biggest Loser Cookbook last month and there are some fab recipes in there. Here is one of my favourites:

ENERGIZING BACON & EGG BREAKFAST BURRITO

Ingredients:

Olive oil cooking spray

3 large egg whites

1 strip nitrate-free turkey bacon, chopped (sometimes I use normal lean bacon)

1/4 cup chopped onion

2 tablespoons seeded, chopped fresh tomatoes

2 tablespoons whole wheat flour, 96% fat-free tortilla (8” diameter)

2 tablespoons (1/2 ounce) finely shredded Light Cheddar cheese

2 teaspoons red taco sauce (sometimes I use Ketchup)

Instructions

Coat a small microwaveable bowl with cooking spray. Add the egg whites. Set aside.

Set a small nonstick skillet over medium-high heat until it is hot enough for a spritz of water to sizzle on it. With an oven mitt, briefly remove the pan from the heat to coat with cooking spray. Set over medium-high heat and add the bacon. Cook, stirring occasionally, for about 2 minutes. Add the onion. Cook for 1 to 2 minutes, or until the bacon is crisp.

Add the tomatoes. Cook for about 1 minute, or until just heated. Remove the bacon mixture to a bowl. Cover to keep warm. Place the tortilla in the pan and return to medium-high heat. Cook for about 30 seconds per side, or until just warm.

Meanwhile, microwave the egg whites on low power for 30 seconds. Continue microwaving in 30-second intervals until they are just a bit runny on top. Stir them with a fork, breaking into large pieces. If they are still undercooked, cook them in 10-second intervals until just done. Stir in the reserved bacon mixture.

Place the tortilla on a serving plate. Sprinkle on the cheese leaving about 2” bare on one end, in an even strip (about 3” wide) running across the center. Top with the reserved egg white mixture and drizzle on the taco sauce. Fold the bare end of the tortilla up over the filling, and then fold the sides of the tortilla over the middle. Serve immediately.

Makes 1 serving

Per serving: 251 calories, 24 g protein, 30 g carbohydrates, 5 g fat,

Hi di hi campers, not long until the weekend now! I'm looking forward to spending some time with Phil as the last few weekends we have spent with family/friends. Nice to get some alone time. Also need to sort a load of stuff out for car boot and to get rid of. Especially as we will have to move soon so want to get things sorted.

At weight watchers this week I lost 0.5lbs. Not too bad but I really want to be losing 2lbs per week so need to step it up. Good news is yesterday I started my workouts again! It's been a month that i've not exercised for because of me recovering from my op but I think i'm back to full swing now! So yesterday started with a 30 min on the cross trainer. This morning woke up and did 20 mins Kundalini yoga. I got Maya Fiennes "Yoga for Real Life" and her DVD "Detox and de-stress" Loving them loads!

After yoga I had a breakfast of a 2 egg and 1 white omlette with ham and a coffee.

My sister came round so I could teach her some basic excel and we just chilled out a bit. Then lunch was a courgette and veg soup I made- really yum. With some wholemeal bread and a yoghurt.



Snack wise I've had a banana and a weight watchers cranberry and orange cereal bar.
Dinner was a special egg rice made with brown rice. Like egg fried rice but a healthier version!


Here is a strawberries and cream cupcake recipe that's a bit lower on the kcals and fat then the normal ones I sell!! Per cake 194 kcals and 5.1g fat.

Makes 12

Ingredients

  • 2 medium free range egg
  • 150g fructose sugar
  • 200g peeled and grated courgette
  • Finely grated zest of 1 lemon
  • 1 tsp vanilla extract
  • 100g rice flour
  • 100g ground almonds
  • 2 tsp baking powder
  • Pinch of salt
  • 100g low cal jam

For the icing

  • 150g fructose sugar
  • 2 tbsp crushed strawberries
  • ¼ tsp crème tartar
  • 1 egg white
  • Pinch of salt
  • Fresh strawberries to top

1. Preheat the oven to 180°C.

2. Whisk up the eggs and fructose sugar in a large mixing bowl until pale and fluffy. Whisk the grated courgette and the vanilla extract into the egg mixture until well incorporated. Finally, whisk in the flour, ground almonds, baking powder, lemon zest and salt until everything is combined.

3. Using a large spoon, ladle a couple of generous spoonfuls of the mixture into the bottom of each paper case. Add a teaspoon of jam, then cover that with a small spoonful of mixture, in order to seal in the jam.

4. Place in the oven for 20 minutes until risen and blonde on top. Once the cupcakes are cooked, cool them in a tin for 10 minutes. Cool the completely in the fridge for a further 20 minutes, as they need to be cold before icing.

For the meringue icing:

1. Place all the ingredients in a big mixing bowl over a pan of boiling water. Stir with a clean metal spoon for 2 minutes exactly to dissolve the sugar.

2. When the mixture is warm and the 2 minutes are up, remove the bowl from the heat and beat with a whisk. Whisk for 9 minutes until cool. The mixture is ready to use when it’s standing up like snow-covered Swiss peaks.

3. If piping the icing, simply fill your piping bag in the usual way. Be sure to ice the cakes very quickly, as the icing will start to set and alter its flexibility as it sits.

Shoes, Shoes, Shoes

Hi di hi campers, another scorchio day here in Oxfordshire :-)

Started the day with a bowl of cornflakes, to hot for much else at the mo and didn't have anything else in really.


Lunch again I was feeling really hot and couldn't be bothered really to eat anything so I had a smoothie.

I baked some cupcakes ready for my cupcake class tomorrow and then Rach and Cat picked me up at 2pm to go to Milton Keynes shoe shopping. We were looking for bridesmaid shoes. We either want brown or orange to go with our dresses. We must have looked at 100's of shoes but nothing!!! So another trip is to be planned! I did however have a lush caramel lite frapp from starbucks- pure heaven!

Dinner tonight was a carbonara but a bit lower fat. Recipe here from "Cook yourself thin". Love that show, she has some really nice recipes and looks like my all time idol Audrey Hepburn. Her website is here.

Sorry!

So sorry for not posting for a little while. Just been a bit busy which is no excuse!

Good news is I lost 2lb this week. Had my weigh in last night and I was really surprised as wasn't expecting to lose any. Need to get back on track with the exercise!

Today for breakie I had Nestle Honey Oats & More- they are so so yummy. My new fave cereal!


Was really busy with work today. I have a project going live this week and it's been throwing all sort of problems out so it'snot been fun. Also today was a massive disappointment as this Thursday I'm due for an operation. I've been told I need 2 weeks off and then I can work from home for a number of weeks after that. But I only have 8 days paid sick days left as i've not been at the company for a year. I was told by my boss originally I could book the 2nd week as holiday but now she is saying she can't. Me and Phil have had a lot of money problems for the past 18 months with losing jobs etc so my salary basically keeps us afloat. I can't afford not to be paid. So I told my boss I have no option but to return to work (from home) after a week. God knows how i'll feel. I just really want a job that I love :-(

Anyway doom and gloom over!

Lunch was a souper affair :-)


Then more work :-(

After working I made some walnut and carrot bread, was really nice. You can find the easy recipe here. I had a piece dipped in balsamic vinegar :-) and then another slice with honey :-)

Dinner I made a morroccan lamb tagine with cous cous, really yummy dinner.


I went to Rachel's house while Phil was at football practice. We are planning Cat's hen do so had lots of fun putting the goody bags together!!

Now i'm in bed after a stressful day and praying for that lottery win again so I can leave the stinky job and focus on my cake business!

Ok question for today: If you could do any job in the world what would you do? Mine would be running a little animal shelter for rabbits and small pets. Love those little critters! Poppy was from a rescue home and there are so many pets just left unwanted by owners :-(

Stupid rotten cold!

Still got my cold. So still not feeling up to doing my workouts which is really annoying. Plus the cough I have is one of those annoying ones that never seems to actually do anything. Even though you cough it doesn't clear your through. Pointless!!!
Yesterday was weigh in day. I was feeling a little sick in the morning so could only stomach an activia natural yogurt. Think it could have been the pizza the night before :-(
For a snack I had celery, carrot and a few Doritos with low fat houmous.

Lunch was a small pack of sushi. Not had sushi for a while so it was a nice treat.

An afternoon snack was a nice cuppa with a smartie cookie I made. It's a weight watcher version and they are so yum and work out at 2 points.

Here's the recipe:
Makes 8 cookies- 2 points each


100g low fat spread
50g golden caster sugar/brown sugar
2 tablespoons golden syrup
1 teaspoon vanilla extract
150g plain flour
1/2 teaspoon baking powder
1/2 teaspoon bicarb of soda
2 x tubes of smarties


1. Preheat oven to gas mark 6/200 c/180 c fan oven

2. Mix the low fat spread and sugar together until pale and fluffy. Then beat in the golden syrup and vanilla extract. Stir in the flour, baking powder and bicarb of soda to form a soft cookie dough.

3. Divide the mix into 8 balls and place on non stick baking tray and press down to form flat circles.

4. Bake in oven for 8-10 mins until golden and slightly risen. Then remove form oven and press 4-5 smarties onto each cookie straight away. leave to cool on tray for 10 mins then transfer to cooling rack.
They will keep for about 3 days in airtight container. Enjoy!!
I then had my weigh in and I wasn't holding out much hope for this week but lost 0.5lb which is better than nothing. Then it was home to have a starter cooked by Phil- vegetable fritters with a poached egg. They are soooo good. Sorry didn't take a pic! Then for dinner we had a roast chicken with veg.


Today I started the day with Weetabix mini's and a cup of coffee. Mid morn I had another smartie cookie :-)

I then popped to see my sis and mum at lunchtime and took my sister into town for an appointment. Got myself a new Terry Pratchett book- "Witches Abroad" and then back home.

Lunch I had some more sushi :-)

Dinner was a chilli beef stirfy with lots of veggies.

Then for pud I made a nice weight watchers pud- Cherry Chocolate pots for 3.5 points each.



Serves 2
425g can of pitted black cherries- drained
10g plain chocolate, melted
150g virtually fat free cherry yogurt
2 x weight watchers Belgian chocolate slices. Each cut into 6 chunks


1. Put half the cherries into a jug/blender and whizz until smooth. Stir in the melted chocolate.

2. Share the choc-cherry sauce between 2 glasses/bowls and arrange the cherries, yogurt and chocolate pieces in alternating layers- yummy!
Finished the night off with left over carrots, celery, doritos and houmous.


Need to get back on track pointing tomorrow. Past couple of days i haven't been very good at it and it's so easy to over eat. MIght also see how I go doing 30 mins on the cross trainer as it would have been a week tomorrow since I last did a workout!!

I love oatmeal

I love oatmeal. I just love it! Especially when it's gloomy outside like today. For these two reasons I had 2 lots of oatmeal! My first one was for breakie. Oatmeal with nutella, almond butter and chopped walnut. Glorious!




My mum popped round first thing before their trip to the horse racing so she was all glammed up :-) She dropped off the money for the massage she's treating me to tomorrow :-) Mucho love for mum.

Then my best friend Lydia came round to drop a book off she borrowed and for a cuppa and catch up.

Onto lunch I did a quorn burger with broccoli and roasted butternut squash and sweet potato.



Then did mucho cleaning of the house. Oh I almost forgot! Me and Phil were in the kitchen when all of a sudden we heard this hissing. It was coming from behind the washing machine. Phil moved it and water was spraying out everywhere! Phil was trying to stop it but couldn't. I was holding up the washing bucket to sheild me whilst shrieking and laughing! He finally managed to stop it and we both stood there drenched! Lol. This is what led me to the cleaning as the floor was soaked! So mop and bucket out and off I went.

Got a bit hungry in the afternoon and wanted a snack before I did a workout so opted for a slice of soya and linseed bread with peanut butter :-)




Did 45 minutes hardcore on the cross trainer, then 10 minutes of weights.

Then it was time to get dinner on the go. I decided to do the mango masala steaks from last week as they were yummy with salad and potatoes. The lamb steaks literally had a spice rub on them made with crushed cumin seeds and garam masala. Then grilled 5 mins each side.

I had a courgette that needed using up so decided to make some courgette fritters to go with it and they were so yummy. Here's what I did:

This made 4 fritters and I worked out 2 to be 2.5 weight watcher points.

65g wholewheat flour
1.5 tsp baking powder
pinch salt
1 courgette grated
1 onion grated
1 egg beaten
pinch cumin seeds

Mix all the above in a bowl







Spray a pan with low cal oil or any oil you want really. I use Fry Light as it's zero weight watcher points. The put 4 dollops into the pan and do each side for about 3 minutes until cooked. And that's it! These would be lush with some crumbled goats cheese or feta in but I didn't have any. Let me know if you try them!



So here is out feast below :-) Was soooo good.




Snugged down with Phil to watch Eastenders and The Leaders Debate. Then came the craving! OATMEAL!!!
Grabbed my almost empty peanut butter jar. Put in some cooked oatmeal, dollop of nutella and chopped walnuts and I was in heaven. The heat from the oatmeal melted what was left of the PB in the jar and well it was just fab!! Phil got jealous so then had to make him some!



I then decided I wanted to try and make some cereal bars. Going to try them tomorrow and will let you know my verdict and post the recipe if they are any good.
But now I really need to get some sleep as me and Phil are going for an early morning swim tomorrow :-)

The sun has gone :-(

The sun has gone and the rain has come in it's place. So today I have pretty much stayed inside.


When I 1st woke up I had the breakfast cookie I made last night- yuuuuummmy! Will def be a regular thing for me now. Weight watcher wise it is quite pointy (6) but it's filling and very nutritious.




As it's Sunday that means I need to order the weekly shopping- I do it online as it just saves so much time and I can keep tabs of what i'm ordering and keep costs down where I need.

So this weeks meal plan is:

M- Lightened up chicken Parmesan- recipe from Jessica @ How Sweet It Is. Monday is my weigh in night so we have a treat meal when I get back.


T- Chilli ginger glazed cod with pak choi on quinoa


W- Spiced lean lamb steaks with salad and potatoes- had this last week but so yum want it again!


T- Turkey spaghetti bolognese


F- Teriyaki chicken with brown rice and peas

S- Spiced Prawn Quinoa


S- Tuna Fishcakes with salad


The plan can change around for various reason but I pretty much stick to it where I can.

Lunch today I made a healthier version of pad thai as I had some bits I needed to use up. Had a ginger tea with it and apple for after.




To make the pad thai I scrambled 1 egg white and set aside.

Then in a wok and some spray oil I'll cooked some carrots slice thinly and spring onions.

Then added a teaspoon of pad thai sauce, 8 king prawns and a pinch of sugar. After 2 mins I put in some Sharwoods Straight to Wok rice noodles (usually use pad thai noodles but wanted to use these up).

Add 1 teaspoon of soy sauce and 1/2 teaspoon of fish sauce. Cook for 1 min then add the scrambled egg white and top with a few crushed peanuts. Yummy!



As the day went on and the weather looking a bit gloomy I needed something indulgent! So I decided to make a coconut hot chocolate. Yes not very good for points but a real treat.

120ml reduced fat coconut milk
120ml skim milk
6 small squares of dark chocolate

Put the milk and coconut milk into a pan and bring to boil. Then add the chocolate, turn off heat and continue to stir until the chocolate has melted. Then enjoy :-) Pure heaven.





For dinner another comfort food with a few tweaks. My version of cottage pie. I used quorn today as I had some in the freezer but to also keep the calories down. But you can obviously use beef mince.





200g quorn mince
1 onion finely chopped
1 carrot finely chopped
150ml hot beef stock
Few drops of worcestershire sauce
415g can baked beans
Freshley ground black pepper
400g potatoes
40g low fat mature cheese grated


Preheat the oven to gas mark 5/190c/fan oven 170c.

First I cook the peeled potatoes in water for 20 mins, mash with a little milk if needed and set aside.

Then in pan I put some spray oil and fry off the chopped onion, carrot for a few mins. Then add the quorn mince and cook for 3 mins.

Then add the beef stock, worcestershire sauce and season with pepper. Simmer for 10 mins.

Add the baked beans and cook for 5 mins.

Add quorn mix into a oven proof dish and top with the mash potato and sprinlke with the low fat cheese.

Bake for 25 mins and then enjoy!





The other day I bought a new book (yes I am a total book slut). It's The Food Doctor Ultimate Diet- Changing the way you eat for good by Ian Marber. Not yet read it but it looks fab and is apparently a good collection of a lot of his other books. There is nutrition info in there and recipes and meal plans. So thinking it will be useful. So a little bedtime reading for me.




Exercise wise today I did 30 mins on the cross trainer doing an interval program and then 30 minutes of circuits/weights.

I really need to start running soon as I have the 5k i've signed up for in July but why do I find running so hard? I can really give it some on the cross trainer for well over an hours but running i feel like my lungs are going to burst! Anyone know why? I can prob do 2 mins running at the mo :-( But i'm determined to run the full 5k in July.

A nice day but not gone to plan!

Today was a lovely sunny day. Started off with a bowl of oatbran. Delish! Loving it more than porridge at the mo. Think i'll add some sliced banana next time :-)



Then we went into town and met one of my best friends Lydia for a cup of tea and catch up. Then bought some fruit and flowers from the market then off to the supermarket for some bits for the BBQ later.

I've been craving seafood for the past few days so decided on a scallop salad for my lunch. Added a bit of soy sauce whilst they were in the pan. It was sooo yummy.




Phil did some bits in the garden and got the BBQ ready. I decided to make it a bit healthier and not have burgers but fish instead. So put some sea bass with sea salt and pepper on and also some chilli prawn skewers. I also did some minted lamb steaks as they are our absolute favourite! I also had 3 chicken wings though which i shouldn't have really had! Oops.




My sister, her other half Ryan and my nephew Connor popped round for a bit. Connor loves playing in the garden when he's here as at the moment they live in a flat and don't have a garden. Bless him.

I didn't do a workout today so i felt pretty bad so told Phil we'd walk to tesco so it wasn't a complete write off! Pic below of Phil on route!






On the way i got a bug stuck in my mouth! Yuk! And it wouldn't go!! I was freaking out so had to buy an apple to dislodge it! lol

Once back home i made a "breakfast cookie". These i found on a fab blog i follow The Fitnessista. They look so yummy i've made one ready for tomorrow and posted the recipe version i did with UK conversion.

45g oats
30 ml milk (i used rice milk)
1 heaped tbsp almond butter (or any nut butter)
1/2 scoop protein powder (i used choc maxitone sculptress or you could sub by putting some cocoa powder)

Mix all these into a bowl until a crumbley mix. Add the milk slowly until all mixed in.

Then you can add pretty much whatever you like. I added a pinch of cinnamon and half a mashed banana. But you could add seeds, nuts, raisins, choc chips etc

Put onto a plate and spread with back of spoon until even then put in fridge until morning. Then eat with a spoon. I know it says cookie but it's a bit softer than a cookie so spoon is needed!





So you'll prob thinking not a bad day food wise yet. Well after making the cookie i had a galaxy bubble (so good though) and then my downfall- Chilli Heatwave Doritos and Salsa! Phil wanted them and I couldn't not have them! Must try harder!
